Vodka Sauce with Chicken, Prosciutto and Sundried Tomatoes
Nothing about the way this Vodka Sauce looks, could do justice to the way it tastes. I originally had this dish at my girlfriend's house many years ago and adopted it...stole it, adopted it....whatever. While Karen went on to make other dishes, I only made this one.....over and over again. Anyone who was "new" to my dinner parties was getting this dish. My secret was that I never made it for the same people twice and if I did, it's usually because they begged me to make it for them again. It's that good!
I'll be the first to tell you, it's pretty decadent. Totally worth it with all those flavors and yes, I was surprised too by sauteing the onions in a stick of butter, but again, I encourage you to adopt/steal this dish and make it your own. If you want to use half a stick of butter and light cream instead of heavy, go ahead, but please do not scrimp on the prosciutto. Prosciutto di Parma is the prosciutto found in most major markets and plenty good enough for this dish, it should be for $16.00 a lb.
1 stick unsalted butter
1 medium onion (diced)
2 lb chicken breast (cut into 1 inch pieces)
1/2 - 1 lb of Parma Prosciutto (thinly sliced and each slice cut into thirds)
1 jar julienned sun dried tomatoes in oil (6oz jar)
1 large can whole, peeled tomatoes (28oz)
1 nip of vodka (or more to taste)
1 cup of cream (more or less to taste)
1/2 cup or more of Parmigiano-Reggiano cheese (grated)
Melt butter in large skillet, add diced onion and cook until onion is soft, add chicken breast and saute until cooked through. Add sliced prosciutto and sun dried tomatoes at once, saute for about a minute. Add can of tomatoes and with your hands, crush them before you add them to the pan and simmer for approximately 20 minutes. Add Vodka, stir and then add cream, stir and cracked pepper and grated Parmigiano-Reggiano cheese
